I don’t know if you’ve heard, but there’s this event going on this weekend in the UK; Something to do with a crown, a throne and an extra day off?
Yes, friends, it’s the coronation weekend here in the UK. And whether you’re observing the royal celebration or not, in the very least I hope you’ll enjoy the benefit of an extra day off with the bank holiday on Monday.
I usually spend bank holidays pottering around the house with family and friends and I usually earmark the “extra” time for baking projects that take a bit longer, or need a bit more fuss. And you know me, I don’t shy away from multi-step bakes.
With the weekend of celebrations in mind, here’s a 10 of my favourite projects from the newsletter archive to inspire you.
1. 3-day Focaccia
Nothing says bank holiday weekend like my 3-day focaccia. It’s hard to describe quite how pillowy, bubbly and airy this is. Plus you learn a bit about preferments, which can ONLY be a good thing. Would you look at those bubbles?! Click here to make it.
2. Buttery onion tart aka quiche
Since it’s the official dish of the weekend as anointed by KC himself, I of course had to mention it. You could call it a quiche, but I much prefer calling it ‘a buttery onion tart’ - from quiche to chic in just a few words. My version is super deep dish with a just set savoury custard and the flakiest pastry of all time. GET IT HERE!
3. Ultimate Victoria Sponge
This Victoria Sponge is a total classic and if you’ve never made my take on it, I promise you will NEVER go back to the 1:1:1:1 ratio; With a few tweaks (including double cream because, well, it’s double cream) you get the rubbliest, softest, greatest crumb. Click here to make it.
4. XXL Cheese scones
Layers upon layers upon layers of tender-flaky pastry laced with cheese, these are not your average scone. Dress ‘em up however you like - they never disappoint. Click here to make them.
5. Go to brownies
Hosting family or friends that ALWAYS have an opinion? I got you. You know what everyone loves? A really, really great brownie. And my friends, this is not just a brownie. This is THE brownie. Papery shiny top, total fudge within. I recommend making two batches. You’ll need them. Click here to make them.
6. Fluffy potato buns
Having a bbq? You know what makes a really really good bap? Potato buns. Bake ‘em in a tray or as singles, never look back. Squishy, tender and a make ahead dream. Click here to make them.
7. Spring onion babka
A savoury bake of dreams, my spring onion babka is one of my favourite projects to date. Airy milk bread swirled with salty-sweet spring onion. Perfect for a picnic or to feed a crowd. Trust me, this will make you fall in love with swirly bread! Click here to make it.
8. Plum frangipane tart
A total classic; The shops are beginning to be filled with fabulous early season plums, a promise of summer. Put them to good use here - a perfect addition to an afternoon tea. Click here to make it.
