Well, well, well, what’s this? an email on a Saturday? Well, I just wanted to jump into your inbox today to share a Kitchen Projects Thanksgiving recipe round-up.
From all the pies, to the fluffiest rolls, I’ve got your back! Though Thanksgiving does have its own unique cuisine, whether or not you celebrate, there’s definitely a lot of festive inspo here that can be applied to all the winter celebrations to come.
Keep your eye out for tomorrow’s regularly scheduled Sunday newsletter where the brilliant Brian Levy joins us for a new edition of the Baking Remix column. He has researched the ultimate plant-based whipped cream - catering for mates or family with dietary restrictions? They can join in the fun too! On KP+ i’ll be sharing an outstanding chocolate-hazelnut praline cream pie which you won’t believe is plant-based.
Oh… and as a special for KP+, on Tuesday I’ll be dropping a truly unhinged but genuinely delicious recipe: Mashed potato in a rösti crust and scalloped potato lid. Trust me, you’ll win potluck if you show up with this. See you there.
Let’s get into it!
Potato buns
Bread will always be my favourite part of the meal. I’ve got two great recipes for you - a classic super fluffy dinner roll, or level up with the double potato bun, stuffed with bechamel, slowly cooked onions and covered in crispy potatoes, natch.
Shaved Sprout Salad With Brown Butter Apple Vinaigrette
A killer side dish by Ben Lippett, author of fantastic substack ‘How I Cook’. The smoky pancetta is such a touch but could be omitted if you’re catering for veggies.
Caramel Pear Pie
I’m so proud of this pie recipe - perfect pastry (this newsletter goes deep into pie crust) and wraps it around the most glorious golden filling.
Plum Crumble Pie
My best ever oaty crumble topping meets jammy plums. Perfect with ice cream and served a little warm.
Not key lime lime pie
Custard pies might not be traditional at Thanksgiving but this is a super zingy tall pie that is the perfect blend of rich and light.
Maple Pumpkin Tart
I’ll never be over the tiny maple syrup cradles. This is a rich, custard tart esque tart with a gloriously shiny top. If you’re looking for a more classic pumpkin pie, click here.
Ultimate Apple Pie
Last year I spent the day learning to make this incredibly deeply stuffed Apple pie with California Native (and now London based) Chloe-Rose Crabtree, chef at the much loved Bake Street. As well as learning about Chloe’s relationship with Thanksgiving, there are some fascinating history and pie lessons to be learnt in this edition
Pecan Miso Honey Tart
With chocolate pastry, it’s a sticky salty twist on classic pecan pie.
French fruit tart
Super simple but satisfying, you can use pretty much any and all fruits for this. Merci Monique. This newsletter is confirmation that French Grandma wisdom > everything.
Baked Chocolate Tart
A dare-say sophisticated take on a pie - gooey chocolate centre with a super thin crust. You can make it ahead of time, just don’t refrigerate it if you want to remain molten!
Crispy apple custard pie
Looking for a new table on apple pie? This crispy custardy caramelised apple dream pie certainly brings the drama. You can make this ahead of time and re-heat it, too. Don’t forget to serve with lots of custard!
