This recipe has taken me from 'I guess it exists' to 'I must make this for everyone I love' about rice pudding - so good! I'm in the US and have found arborio rice to work great. Also a cardamom pod works well for flavoring if you don't have a vanilla bean!

sounds amazing! however I think your math on the 9% reduction is a little iffy, if you’re not getting the weight of the pan empty (Ie the weight of just the contents) 9% of the total weight will be really different depending on the weight of the pan!

Why did mine turn out sticky instead of creamy? I used enriched medium grain white rice (here in the USA). I had to convert the measurements to volume, so could it be that I added too much sugar?

I tried this at my moms house, who has a gass stove, and it didn’t turn out, it stayed too runny, never thickened. But I knew something was up, bc I had tried Ed Kimber's rice pudding recipe with a similar result.
Turns out it was because I couldn’t get the flame right for just a simmer! It was either boiling hard, or the pot was halfway off the stove.
Just made it at my home and the result was amazingly good….!!

Ooh just any short grain rice should work! Sushi rice?? I bet that would work.

You’re so right! I’ve updated it now. It’s more like 20% (my pan weighed 750g so just re did the maths) thank you Greta 🤦♀️🤦♀️🤦♀️

This rice pudding was incred, interesting method which is now my new go-to. Can’t wait to try with different mix ins at the end x
