This recipe has taken me from 'I guess it exists' to 'I must make this for everyone I love' about rice pudding - so good! I'm in the US and have found arborio rice to work great. Also a cardamom pod works well for flavoring if you don't have a vanilla bean!

This sounds amazing. I’m going to add 10g of coconut cream (or maybe replace some of the double cream with coconut cream?) to give it those sweet Thai sticky rice and mango vibes!!!

This sounds so good! I'm in Canada and don't think I've ever seen "pudding" rice in the store. I'm just wondering what it might be called here.

Can’t wait to try this! Could you share the name of the shop on Drummond Street where you tried some mangoes? I remember you posting about it on your story but it hasn’t made the map. Even if it wasn’t a TOP TOP mango, I would love to get some there for geographical convenience

sounds amazing! however I think your math on the 9% reduction is a little iffy, if you’re not getting the weight of the pan empty (Ie the weight of just the contents) 9% of the total weight will be really different depending on the weight of the pan!

You’re so right! I’ve updated it now. It’s more like 20% (my pan weighed 750g so just re did the maths) thank you Greta 🤦‍♀️🤦‍♀️🤦‍♀️

I was born in northern Australia and sticky coconut rice and mango was a staple as a kid. Living in London now and just made this (loving Indian mango season - thank you so much for the mango map!). It’s scrumptious and has made me very homesick in the loveliest way. Thank you 🧡🫶

Why did mine turn out sticky instead of creamy? I used enriched medium grain white rice (here in the USA). I had to convert the measurements to volume, so could it be that I added too much sugar?

I tried this at my moms house, who has a gass stove, and it didn’t turn out, it stayed too runny, never thickened. But I knew something was up, bc I had tried Ed Kimber's rice pudding recipe with a similar result.

Turns out it was because I couldn’t get the flame right for just a simmer! It was either boiling hard, or the pot was halfway off the stove.

Just made it at my home and the result was amazingly good….!!
