I hope all is well in your world. Despite my best attempts to dodge COVID, it caught up with me this week. I tested positive on Wednesday (which also happened to be my 30th birthday - what a wonderful gift!) and it’s been rough. Though I’ve tried to will away the virus and get back into the kitchen, it’s got the better of me and I’m very much stuck in bed! As a result, I’ve had to delay this week’s newsletter.

Cashew, cardamom, white chocolate and oat cookies

Cashew nut, cardamom, Horlicks and oats are comforting flavours for me. A good warm cookie is nothing but an edible comfort blanket too I would say. This cookie came together in my kitchen almost 10 years ago and has been a staple ever since. Growing up in India, in the 80’s, there was this cashew nut biscuit to which I was partial. It is called ‘Good Day’ and one of the most sold biscuits in the world to date apparently! This is nothing like that ‘Good Day’ biscuit except that it has cashew nuts and carries the comforting memories of my childhood.
