Dear readers,
I hope all is well in your world. Despite my best attempts to dodge COVID, it caught up with me this week. I tested positive on Wednesday (which also happened to be my 30th birthday - what a wonderful gift!) and it’s been rough. Though I’ve tried to will away the virus and get back into the kitchen, it’s got the better of me and I’m very much stuck in bed! As a result, I’ve had to delay this week’s newsletter.
For KP+ subscribers, there is a silver lining for this week; The brilliant Tarunima Sinha, aka @mylittlecaketin, has swooped in with a recipe for Cashew, cardamom and white chocolate oat cookies. Perfect for housewarming gifts, park hangs, picnic or bbq contributions, a good cookie recipe goes a long way.
Tarunimas’s recipes are packed full of flavour and are perfectly balanced; It’s genuinely an honour to be sharing a recipe from her. I always count on her recipes as reliable jump-off points for adapting your own recipes - she’s also included some very useful tips on how you can make this recipe ‘your own’ at the end.
Oh, and there’s always the KP recipe index to browse for inspo!
Until next week, stay safe!
Lots of love,
Nicola
Cashew, Cardamom and white chocolate oat cookies
by Tarunima Sinha
Cashew nut, cardamom, Horlicks and oats are comforting flavours for me. A good warm cookie is nothing but an edible comfort blanket too I would say. This cookie came together in my kitchen almost 10 years ago and has been a staple ever since. Growing up in India, in the 80’s, there was this cashew nut biscuit to which I was partial. It is called ‘Good Day’ and one of the most sold biscuits in the world to date apparently! This is nothing like that ‘Good Day’ biscuit except that it has cashew nuts and carries the comforting memories of my childhood.
