I’m hoping to make this and wonder if using a mix of bread flour and AP flour (+baking powder) would contribute to a high rise? Would you by chance have tried that before?

I used tapioca flour. Seemed like it worked well.

Hi Nicola.The two choux disks referred to in the assembly stage are formed by slicing your cooled choux horizontally, right? Thank you - this looks amazing!

Hey karen, apologies! I'll clarify - you bake two separate discs! So you need two 8 inch tins; You can bake at the same time. x
