I’ve been making the same pie dough for the last decade…but you had me at creme fraiche. I took a leap of faith and it blew my mind. The crust had fabulous flavor and incredible flakiness. Total home run. The family wanted an apple pie at Thanksgiving, so I’ll need to try the pear recipe at some point. But OMG, the dough. Thank you!
I made this at the weekend and it was delicious. My family scoffed it so quickly I forgot to take a photo. Thank you Nicola for extending my pie repertoire. I am a devote of a pear & frangepane tart but now find there’s room in our world for 2 pear pies
I have a question re: par baking pie crusts (for other kinds of pie, like pecan) and wanted to know if you think its ok to free parked pie crusts? well wrapped in foil, that is. Trying to figure out how to bake a larger batch of pies without leaving everything to the last day. Thanks!
Could I freeze this entire pie before baking so I can make it in ahead?
