Myself and three people I love and cook for regularly are lactose intolerant. I had given up hope of making anything again that relies heavily on whipped cream. I cannot tell you what a game changer this truly is and how grateful I am for the work that went into it!
This is so useful - I often have to make vegan / dairy free alternatives for work so will definitely be trying this! Do you think it works without the guar gum?
I decided not to give a "without guar gum" option because this ingredient just makes the recipe's outcome much more predictable and reliable. You could of course try a different vegetable gum or even a starch, but it's unavoidable that something acting as a emulsifier/stabiliser be present for the best outcome. As I write above, even organic dairy creams in the US have vegetable gum added to keep them from separating.
As a non vegan, I thought this cream soooo divine and I have a new found respect for the naturally occurring dairy emulsions that we definitely take for granted haha ☺️ it’s always good to know how to cater for dietary requirements 😆 nothing says I love you than I don’t want you to be in moral or physical pain!
We had a vegan come for Sunday lunch (with 6 carnivores) last week and I was so stressed by making a main course, cream would have sent me over the edge! They just got coconut yog to go with the vegan crumble...
A chipotle vegan pie from the Gran Luchito website. I didn’t use quite the amount of the chipotle sauce they suggested and it was still really really spicy! Luckily she likes spicy! I sent it home with her so too bad if she didn’t like it & was just being polite🤣. For the non vegans I made Delia’s Autumn Lamb with Beaujolais (although it was just red wine) so I could go off to play tennis before lunch.

Many thanks for this - I don’t have any guar gum at the moment but may try with xantham gum instead and see if that works.
I’ve used xantham gum and I can report it works really well! Managed to whisk to stiff peaks in a couple of minutes. Hoorah!
Oh that's really good to know! Did you use the same amount of xanthan gum? I have way too many vegan emulsifiers gathering dust!

This worked so well! Has anyone tried using this as a substitute for heavy cream in other recipes like ice cream / ganache?
