Hello! Thank you for sharing this. It sounds delicious! Could this be used for pain au chocolat or would the recipe need tweaking? Thank you!

Hey Chloe! You would need to make this into a yeasted dough recipe to make it work for pain au chocolat. That being said, you could make some lovely chocolate twists which would be a good breakfast alternative in the meantime.

Hi Nicola! Thank you for your generosity for sharing these projects :) What books would you recommend for learning more about lamination? Thank you, love from Chile :)

Hey Gabriela, sorry for my delay! There are a few fancy books out there which go into detail about lamination but I have to say I haven't found a book I really love for teaching the in depth basics. Melissa Wellers 'A Good Bake' goes into it well, as does the Tartine book. For croissant specialist books, there's one called 'All About Croissants' which is pretty focused on the subject (as the name would suggest!) Hope this helps xxx

My favourite so far! When you did the compound butter for the double choc PAC on your insta, was this the same recipe? But obvs with yeasted croix detrempe.

Actually, that chocolate butter CRX was made with actual chocolate melted and then whipped into the butter! Cocoa would work though too.

Oh my gosh, what a talent you are thinking up these things. Look forward to a recipe on that one ☺️☺️

When I was a child my dad would occasionally take me to a family friend’s house and their son, Yohan, was chess master. After a few trips there, I realised that I really enjoyed playing chess but I wasn’t so bothered about winning, which I think wound Yohan up a bit - also explains a lot about my life. My game sits somewhere between hope/play chess. And yes, this year is going to be totally vintage - a peach of a year, a peach (or apricot) tatin of a year.

Peach tatin - iconic.

Are you still enjoying chess now? And annoying people who take it seriously? My dad always tries to play chess by making the most 'irritating' move possible. I can't play against him anymore. We fall out too much!

My game is a bit of a mess at the moment so not playing much - suspect it would be quite annoying for the other person. Working on it. Hopefully one day later this year we can play a ‘not irritating’ chess game over a pub lunch - if they ever open pubs again that is!

The cocoa powder seems to be missing from the detrempe recipe? Trying to figure out the numbers from the spread sheet but struggling to make it make sense.

Hi Nicola! Can I keep the unbaked puff in the fridge for 2-3 days before baking? Does the quality of puff change in that short period of time? Thank you!
