i am making a pithivier tonight1 sausage, spinach, feta(a bit of mozzarella. for meltyness. sesame and maldon salt on top. will try a photo to send and a YUM-YUM factor if it works out.

Your point about a sharp pastry cutter is so important. I learned the hard way to always hone my knife before slicing. Love that you included such depth of history and attention to detail on the recipe. I now have a project for next weekend. Wonderful post!
