Congratulations! Sunday Times Best Seller list is amazing!
I have a strong memory from childhood of going to a friend's house, and dessert was chunks of pineapple marinaded in rum (yes, I would have been 9 or 10) and rolled in brown sugar and then toasted over an open flame and dunked in whipped cream. In hindsight I can't figure out how it worked without the sugar melting off and flaring in the flame or the flame imparting a chemical flavour, because I remember there were a couple of little spirit burners dotted down the table. But I still think boozy, caramelised pineapple is one of the best puddings in the world.
Fantastic news! Congratulations! My copy, unfortunately invisible to the Sunday Times (though still delightful for me), has made its way across the Atlantic and landed in Los Angeles. It's a tremendous accomplishment. I keep alternating between theory and recipe halves, each equally tempting to get lost in.

Re. Pineapples, buying a fresh one is always a lottery. Will it be ripe? Is it sweet, or does it taste of nothing? Or worse, have I left it too long to ripen and it's brown inside.
