I made truffles very unplanned last year and kept them in the fridge for maybe two weeks - were definitely better at the start than the end - is the shelf life in the recipes when they might go bad, or just beat eaten before then ? Happy festive truffling! They will begin to go off after the shelf lives I’ve given them, but you can up the sugar quantities should you want to extend the recipes by a few days.
