So happy you’ve made this Nicola, we bought some really gorgeous examples on our journey through SW France, including one at a market which the baker sprayed with aged, spiced rum just before boxing it up. This looks perfect.
your recipes are so beautiful! every one i've made has been a hit. i've been wondering though if there's any recommendations of resources to translate UK oven settings to US? for those of us with regular non-convection crappy old basic gas or electric ovens? i've yet to find a foolproof one.
I love how you share the tests of making a perfect pie! While I’m visiting Normandy, apple pie is a must, so this looks amazing and I’m definitely going to have to try it myself.

Omg. Sprayed with rum!!!! Genius
I think they also spray with calvados in some parts. I’m going to attempt this soon!
Definitely making this today!

I hadn't realised kissabels were a heritage variety - I assumed they were a new-fangled hybrid.
Going to make this for Thanksgiving, will be a nice twist on the traditional apple pie!
This was DELISH--although we made it in a high-sided 8" cake pan and it took forever to bake. But so, so tasty; we'll definitely be making it again.
ooh so much intrigue - and yum factor. Bookmarked for later!!
