This is, once again - the most beautifully put together missive. There are many inspiring food blogs on Substack but this one just fills me with joy everytime. The science bits do it for me : ) hehe..

Oh my Nicola, such a beautiful collection of recipes. I must check with the grandchildren to whom I gave your book to see if they have started cooking yet. I love making curd but use it primarily to add to icecream, like one litre of icecream to one complete quantity of curd, so yum! And Orange cake would have to be one of my favourites.

I’ve just been using Camilla’s marmalade technique and recipe with ruby grapefruit and lemon. I deviated only by pressure cooking the whole fruit (15 minutes at high pressure, natural release, cooled overnight). I had never tried the mouli-légumes approach before and I was delighted by how well it worked. Very successful! Tomorrow I plan to do the same with a clementine/lemon/bergamot combo and a grapefruit/pomelo combo.
