Thank you for indexing! Since my TBI, all i want to do is bake all the time and i've been deep in the archives. Quick question: will the mango custard keep in fridge or freezer til ready to princess cake? i have a fridge full of mangos

I'm planning on baking laminated pastries from SIFT this weekend, but I just wanted to ask if the pain suisse is able to be frozen once it's shaped/before baking because of the pastry cream? Just checking bc it's my favourite and I'd love to have it on demand in the freezer lol

To celebrate the return of Indian mango season, I am eating the last of the Kesar pulp I froze last year. Just with yoghurt though - I'm working all weekend and don't have any oomph for baking.
