Quince and Cheese pie
When developing a pie recipe for the lark! pop-up last month with the wonderful Verena Lochmuller (thank you to everyone who came) I knew I wanted to do something that blended two of my great loves together - quince and cheese (in some form).
I had thought about taking inspiration from the Cuban guava cream cheese pastelitos, but decided to go for something that towed the line between sweet and savoury. This is an alternative cheeseboard wrapped up in a pie and it is particularly good with a spoon of wobbly quince jelly. I used Winchester cheese, which was strong in flavour and had intriguing comte like crystals, but any rich mature cheese will do well here. You want it to really ZING!
You could serve this as a main with a vinegary green salad, or a little wedge as an alternative cheeseboard come dessert time - keep people guessing! That’s what I always say!
