Sometimes developing a recipe is as simple as merging two favourites together. Think of yourself as a matchmaker. Or Dr Frankenstein. Whether that’s bringing your favourite ganache together with a new-in-town biscuit, or combining a snazzy tart dough with an infused custard, it’s fun to create new generations of pastries with two distinct parents.
