Quince Jam
While this jam might be slightly more labor-intensive than some of my other recipes, it’s certainly worth it. And anyway, it’s no more complicated than marmalade (which was originally made with quince!). You’ll be rewarded with a stash of brilliant scarlet jars filled with tender poached quince suspended in fragrant jelly. I like it so much that I do that silly thing I often do with prized jars and never use it for fear of running out. Don’t be like me! Enjoy yourself, and you can always make more next year.
