Today, Bronwen Wyatt is here to share a simply outstanding option for incoming festive breakfasts: Stollen Muffins, a spiced make-ahead muffin batter that you bake with a gooey frangipane centre. You can’t argue with a warm muffin? I did also test making these with marzipan in the middle and they were fantastic.

I’m tickled Nicola let me bring you not one, but two spins on fruitcake this year. First was the fruit cake bon bons, and now I offer up stollen muffins, inspired by my beloved German christmas bread. These take a quarter of the time, and you can prep the batter in the evening to bake them off fresh the following morning. Inside each muffin I’ve tucked a coin of almond frangipane to mimic stollen’s traditional marzipan center.
