Today we’ve got a crowd pleasing confection that is perfect for bagging up and gifting: Spiced honeycomb dipped in chocolate! It would also be delightful crumbled onto all sorts of things - ice cream, puddings, brownies— anything really.

One of the first things I ever sought to make was honeycomb, also known as cinder toffee or hokey pokey. It always feels like an edible science experiment for me — heating sugar until a specific temperature then adding bicarb and watching it bubble, rise and then, finally, set. You do need a thermometer to make this recipe, but other than that, it requires very little kit (and skill) compared to other fancy confections, most of which scare me off with their finicky nature.
