Hello and welcome Day 3 of the Kitchen Projects 2025 ‘12 days of Christmas’, the festive recipe advent calendar.

Today we have a truly genius recipe. I bow down at the feet of Rose Wilde, author of the very excellent Bread and Roses. This recipe for Panettone Chiffon is just gorgeous - all the flavours of panettone without the months of work! I baked these, as suggested, in muffin cases, as well as in a chiffon tin (angel tube pan) and it was EXCELLENT. I daresay I enjoyed it more than *actual* panettones I’ve had recently…. Bravo, Rose!

Panettone is one of those beautiful, maddening breads — the kind that makes bakers both swoon and swear. It’s fussy to mix, fussier to bake, and, if you’re doing it properly, you hang it upside down after it comes out of the oven so it doesn’t collapse under its own buttery weight. I love the ritual of it, but I wanted to capture the same golden flavor and airy joy without needing a day-long commitment and a prayer to the gluten gods.
