12 Days of Christmas: Maple Pecans

Today, I’m thrilled that Camilla Wynne is returning with a perfect festive snack: Maple Pecans. I just know I’ll have these on repeat all through the Christmas period. They are also perfect for jarring up and gifting! Over to Camilla.
While there are myriad ways to candy nuts, this is hands down my new favorite. The process is quite magical if you’ve never made maple sugar before. When you bring maple syrup to a boil on the stove, the water holding the sugar in solution evaporates, causing crystallization. Add some rich toasted pecans at the right time and they become imbued with maple and encrusted with sparkly maple sugar. A little salt amplifies the flavors.
I recently used these in a Thanksgiving salad of bitter lettuces, roasted squash, pear and blue cheese. My sous chef, otherwise known as my 15-year-old niece, loved them so much that I gave her the rest of the batch to take home. They did not survive the evening.
