Kitchen Projects is a weekly newsletter by me, Nicola Lamb. I’m a recipe developer, writer and pastry chef based in London.

Kitchen Projects is all about giving you a look behind the scenes. Part toolkit, part love letter to food, I want to take you on a deep dive on how to achieve your perfect pastry.

Every week, I’ll run down a recipe for you and give you intel on what/why/how it works. From apple strudel to cannolis, flaky cheese scones to brioche, biscuits to buns, we’ll go on a baking journey together.

I’m also proud to have incredible guest columnists here: Camilla Wynne has joined KP as our resident preserving columnist, while Brian Levy authors the Baking Remix column. I’m thrilled to also have Octavia Lamb to teach us about chocolates and confections. Let’s do this, shall we?
